Tom Colicchio Hosts Annual Doctors of the World Dinner
Last night, I had the honor of attending a dinner hosted by an important organization called Doctors of the World. DOW mobilizes the health sector to promote and protect basic human rights and civil liberties. They've built a network of affiliates around the world and fostered partnerships with local communities to provide essential care and services. They also train community residents to carry on their mission of health. In 2007 alone, 41,200 people participated in DOW programs. Not only did celebrity chef Tom Colicchio generously allow the group to use his private dining room at Craft in NYC, but he also catered the entire event. The food was absolutely flawless with one guest describing the foie gras mousse hors d'oeuvre as "a little drop of heaven." The main course included Tom's signature dish of beef short ribs, roasted halibut, and creamy butternut squash risotto.
Having a serious sweet tooth myself, I anxiously awaited the arrival of our desserts. Not surprisingly, the apple crumb was tart, buttery, and delicious. However, the true highlight of my meal would have to be the chocolate souffle which was the perfect ending to a perfect meal. It's clear to me now why Tom was tapped to be a judge on Bravo's Top Chef as he definitely knows his way around a kitchen.
